Notes

11/20/2020 - The yeast ended up bubbling up and almost blowing the top of the fermenter off with this batch. Had to remove the airlock and clean out all the yeast and replace. Will replace the lid and everything when I add the dry hops.

11/24/2020 - Added 2oz Citra & Mosiac to fermenter. Had to stir hops in because of heavy yeast cake on top.

12/2/2020 - Kegged - FG=1.010. Piney and resiny hop flavor and aroma. Firm bitterness, hazy appearance. Put into kegerator right away to carbonate and serve.

12/10/2020 - Bitterness seems more firm/sharp than I was expecting. I'm not sure if it was from the simcoe hops at 60 minutes. although I read that they are low cohumulone. We'll see what happens as it ages.
